I'll say this...
I'm pretty sure I would be happy with a fixed-magnification scope 99% of the time.
The V-16 only gets turned down from 16X to something lower when someone else is trying it out and the 16X magnification is just too much for them, either because of wobble-exaggeration or eye-alignment issues.
Here in Houston we shoot when it's hot but I've never had an issue with mirage at 100 meters or less. It may be more of an issue somewhere in a desert environment but I haven't experienced that myself yet.
The only real downside to a fixed-mag scope is if the magnification you really want is somewhere between what is available, such as wanting 20X but the scope you want is only offered in 16X or 24X. A variable-mag scope lets you dial in what you want anywhere on the continuum of that scope's magnification range.

Buy both the FX3 and the VX3.
1. Try them both out.
2. Keep the one you love.
3. Sell the one you don't like to me for $100.

You have more Leupold scopes on your rifles than I think the local Sportman's Warehouse has in stock!
